It’s almost time for the big game, which means it’s time for some big flavor from Backyard Rubs.  Even though you may not get to watch the big game with a big crowd this year, that doesn’t mean you shouldn’t still have a big spread with lots of flavor. We’ve got three simple and flavorful recipes that will keep you full and coming back for seconds or thirds (no judgement here). 

Spicy Mama Salami Roll Ups

There is nothing healthy about this recipe except for our organic made Spicy Mama rub.  But who doesn’t love, salami and cream cheese.  This was a classic dish served in Maryn’s family during family gatherings.  We have taken it up a notch by adding our Spicy Mama rub and throwing it on the smoker to bring the flavors together and to add a touch smoke to flavor profile. We hope you love these.  On a side note, be careful how much Spicy Mama rub you add as you don’t want to over do it (there is salt in Spicy Mama as well as in the salami, so be careful or just make sure you have plenty of water around). 

Spicy Mama Salami Roll Ups

Prep time: 5 minutes

Cook time: 10-20 minutes

Ingredients:

  • 1tsp - Spicy Mama Rub
  • 10 - Slices of Hard Salami
  • ½ Cup of Softened Cream Cheese

Instructions: 

  1. Mix 1tsp - Spicy Mama Rub and ½ Cup of Softened Cream Cheese in mixing bowl. 
  2. Spread cream cheese mixture on to each slice of salami. Once mixture has been spread on each slice of salami, roll each piece. 
  3. Smoke Salami Roll Ups on indirect heat for 10-20 minutes until salami has reach desired crisp and color. 
  4. Serve and enjoy. 

Daddy Crack Fresh Bruschetta

Our Daddy Crack rub will be sure to enhance this authentic Italian dish. The pairing of fresh tomato, fresh basil, fresh mozzarella, and garlic can’t be denied as one of the best. This classic appetizer is the perfect large gathering or finger food to serve. As you and your guests will be “grazing” all night during the big game, you can feel good about this appetizer as it is light and fresh. 

Daddy Crack Fresh Bruschetta 

Prep time: 10 minutes

Cook time: 10 minutes

Ingredients:

  • 1 - French Baguette
  • 3 - Medium Roma Tomatoes
  • Fresh Mozzarella Cheese
  • 1 tsp - Daddy Crack 
  • 2 tbsp - Butter, melted
  • 1 tbsp - balsamic vinegar
  • Fresh Basil 

Instructions: 

  1. Slice the baguette (on an angle - if you want to be fancy), into ¾ inch pieces. Slice the mozzarella into ¼ inch slices (same quantity as the baguette slices). Slice the tomatoes the same as the mozzarella. Set to the side. 
  2. Mix butter, balsamic vinegar, and daddy crack in a mixing bowl.
  3. Brush the butter mixture onto pieces of baguette. 
  4. Toast or grill until toasted on each side
  5. Once baguette is grilled add the tomato, mozzarella, and basil.
  6. Cook for 2-3 minutes until desired crisp and melted. 
  7. Serve and enjoy.

What would the big game look like without chicken wings? These classic chicken wings will be sure to enhance your viewing party. Using our Spicy Mama rub you will enjoy these spicy chicken wings and will certainly be likcing your fingers to get every ounce of spice. 

Spicy Mama Chicken Wings

Prep time: 10 minutes

Cook time: 15 minutes

Ingredients:

  • 2 lbs - chicken wings
  • 1 tbsp - Extra virgin olive oil
  • 2 tbsp - Spicy Mama rub

Instructions: 

  1. Toss chicken wings in olive oil
  2. Apply Spicy Mama rub liberally to coated chicken wings
  3. Smoke Indirect or bake in oven for 45 minutes at 275-300 degrees. 
  4. Take off and rest for 5 minutes. 
  5. Increase heat in smoker or oven to 450-475
  6. Put back on smoker or in oven for 5-10 minutes until desired crispiness is reached
  7. Serve and enjoy.
