What’s better than fresh Georgia peaches in the summer? Possibly nothing. This is why we look forward to The Peach Truck every year. What, you don’t know about The Peach Truck? As you know we are all about real flavor with real ingredients. This is why The Peach Truck and their fresh Georgia peaches pair perfectly with our rubs. This year we took some inspiration from The Peach Truck Cookbook and made the following recipes: Peach-Jalapeno Cornbread, Sweet Heat Peach Empanadas, Sweet Cucumber Basil Salad, Peach Dutch Baby, Peach Coffee Cake, Spicy Mama Peach BBQ Sauce for some Peach Glazed Ribs, Peach Caprese Salad and Stone Fruit Crostini. Follow along below for the recipes.
We found that these recipes paired perfectly with our bbq rubs and made for some great meals shared with our friends and family.
Daddy Cracked Stone Fruit Crostini Appetizer

Prep time: 10 minutes
Cook time: 20 minutes
Ingredients:
- 1 baguette
- Extra Virgin Olive Oil, to taste
- ½ pound mozzarella cheese, sliced (pre-marinated -- choose what you like best)
- 1 cup chopped peaches
- 1 cup chopped stone fruit -- we used both tomatoes and cherries.
- Basil or thyme, optional
- Daddy Crack, to taste
Instructions:
- Preheat the oven to 425 degrees Fahrenheit.
- Slice the baguette into ½ inch slices. Place the baguette slices in a single layer on a baking sheet. Drizzle with extra virgin olive oil and sprinkle with Daddy Crack. Back for 10 minutes, or until toasted.
- Once the baguette is out of the oven, arrange cheese first, then peaches, stone fruit, and herbs on the bread slice. Sprinkle with additional Daddy Crack to taste if desired.
Peach Glazed Ribs with Spicy Mama Peach BBQ Sauce

Prep time: 1.5 hours
Cook time: 4 - 5 hours
Ingredients:
- Spicy Mama Rub, to taste
- Mustard, using as a rub binder to ribs
- Pork Ribs
- Homemade Peach BBQ Sauce
- 5 medium peaches, pitted and cut into large pieces
- 2 tablespoons vegetable oil
- 1 large finely minced vidalia onion
- 3 garlic cloves, minced
- 1 ½ cups lightly packed brown sugar
- ½ cup apple cider vinegar
- ¼ cup worcestershire sauce
- 3 tablespoons of Spicy Mama Rub
- 3 tablespoons mustard
Instructions:
- Smoke at 250 degrees Fahrenheit for 4-5 hrs until they are tender and almost fall apart when holding from the end.
- Spritz ribs every 45 minutes with apple cider vinegar
- Wrap in foil for last hour and glaze with peach bbq sauce
- BBQ Sauce:
- Mince/chop onions in food processor so that they are finely chopped. Remove and put in large sauce pan.
- In an empty food processor, puree peaches until smooth.
- Heat a large saucepan over medium heat. Add the vegetable oil and garlic with the onion. Cover the pan and cook, stirring occasionally, for 10 minutes. Stir in the remaining sauce ingredients except the mustard. Bring to a boil, then reduce the heat to maintain a low simmer. Stir regularly for 30-40 minutes, until reduced and thickened. Remove from the heat and stir in the mustard.
- Store in the fridge for up to 1 month.
Spicy Mama Peach Pulled Pork
Prep time: 10 minutes
Cook time: 8-12 hours depending on size of pork
Ingredients:
- Spicy Mama Rub, to taste
- Mustard, using as a rub binder to ribs
- Pork Shoulder
- Homemade Peach BBQ Sauce (see recipe above)
Instructions:
- Smoke at 250 degrees indirectly with a water pan.
- Apply rub liberally
- We prefer to smoke fat side down
- Spritz with apple cider vinegar every hour.
- Wrap with foil or butcher for the last 3-4 hours
- Smoke to internal temp of 203 and let rest for at least one hour before shredding.
- After shredding mix in peach barbecue sauce to taste
Sweet Heat Peach Empanadas
Prep time: 30 minutes
Cook time: 2 hours
Ingredients:
- Store bought dough (or homemade)
- 2 TBSP olive oil
- 1 large onion, finely diced
- 1 TBSP Spicy Mama
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 2 garlic cloves, minced
- 1 lb sausage
- 3 medium peaches, pitted and diced (about 3 cups)
- 2 TBSP sugar
- 1 egg (optional)
Instructions:
- To make the filling, heat the olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring, until clear. Add 1 tablespoon of Spicy Mama, cumin, cinnamon, garlic and sausage and cook, breaking up the meat with a wooden spoon as it cooks, until the sausage is browned, about 8 minutes. Add the peaches and sugar, stir, and cook until the peaches are heated through, about 2 minutes. Remove from the heat. Chill the filling for 1 hour and up to 48 hours.
- Roll out dough and cut into circles (with a bowl or cookie cutter), fill the dough with filling and fold over and seal the empanada. Brush with a beaten egg (optional)Bake according to dough instructions.
- If you have extra filling - enjoy eating it straight or on nachos or with quesadillas as an option too!
Cracked Peach Cucumber Basil Salad
Prep & total time: 10 minutes
Ingredients:
- 1 TBSP Daddy Crack Rub
- 2 TBSP fresh lemon juice
- ⅓ cup extra-virgin olive oil
- 6 cucumbers, halved and sliced (about 3 cups)
- 2 medium peaches, pitted, cut into wedges and sliced
- ¾ cup thinly sliced sweet onion
- ¾ cup crumbled goat cheese
- ½ cup fresh basil leaves, torn
Instructions:
- Mix olive oil, lemon juice, Daddy Crack, Peaches, Cucumbers, an donions together. Once mixed, stir in the feta, basil and serve.
Daddy Crack Peach Caprese Salad
Prep & total time: 10 minutes
Ingredients:
- ½ pound mozzarella cheese, sliced (pre-marinated -- choose what you like best)
- 2 large peaches, sliced into rounds
- 2 medium heirloom tomatoes, sliced
- Fresh basil, to taste
- Daddy Crack, sprinkled to taste
Instructions:
- Arrange the mozzarella, peaches, tomatoes, and basil on a platter or plates. Sprinkle Daddy Crack to taste and serve.
